History of Chaï tea

Do you know Chai tea? This delicious spicy tea that has been in the news for the last few years, and yet it is not new! 

Chai Tea is a tea of Indian origin, moreover the word “Chai” means “Tea” in Hindi language. This word is derived from the Persian word “Chay”, itself originating from the Mandarin “Cha”. 

Its recipe would have been elaborated about 5000 years ago! Traditionally, this slightly sweet drink was made of spices infused in water. Chai has its origins in Ayurveda, the traditional Indian medicine that uses it for the benefits of its spices. The mixture of traditional Indian spices is called “masala”. 

But then how did the recipe for Chai made from black tea come about? 

If the culture of tea in India is part of the recent history of the country, it is now one of the main producers of tea with famous teas such as Assam tea or Darjeeling. Little by little, black tea has entered the making of this traditional recipe and this is how Masala Chai was born. 

According to Indian tradition, Chai is prepared by decoction. The tea leaves are left to infuse for a while in boiling water, with the addition of milk, sugar and, of course, spices! 

The preparation is then filtered to separate the liquid from the residues of tea and spices. 

Traditionally, Chai latte is served in the same way as Moroccan tea: with large up and down gestures to oxidize the drink. 

In India this drink is consumed by everyone, regardless of social class and occasion. In the street, in the houses but also during weddings and even religious ceremonies. 

Today this drink is known by different names: Chai, Chai Tea, Masala Chai or Chai Latte… all mean the same thing! 

How to prepare Chai tea 

How to prepare this spicy black tea so that it releases all the splendor of its aromas? It is simple: 

We advise you to let 2 grams of tea infuse for 3 minutes in simmering water between 85 and 90°C. 

But we can never repeat it enough: the secret of a good tea is to enjoy it first! You can shorten this time if you prefer a lighter taste, or lengthen it for a more intense result. 

Traditionally the Chaï Latte is served with a cloud of milk and is slightly sweetened. Add milk foam and sprinkle with a little cinnamon for a delicious Chai Latte!
